Celiac Disease
Celiac Sprue is a disease of the lining of the small intestine. It is a genetic disorder that occurs when the grain protein gluten comes in contact with the inside lining of the small intestine (the villi). Those who have Celiac Disease are encouraged to eat a diet free of the gluten protein, which is found in wheat, rye, barley, and oats.
